Superbowlin' and a magical GIVEAWAY from a fellow blogger!

Because my boyfriend is wonderful, he surprised me with 2 bags of Daiya cheese as an early Valentine's Day present. I was ecstatic and yes, we went through a whole bag in 2 days. I could sit and munch on this cheese as-is all day long! After hardly eating the whole day, I decided to make vegan nachos for the big game, inspired my the mediocre ones we had the night before at The Pulse Cafe (newly opened). I took a pic with my phone so sorry for the shoddy quality. Regardless, I ate a ton, it was so good! Refried beans, Daiya cheese, chopped jalapenos and olives, cilantro, whole wheat tortilla chips, guacamole, and medium salsa. A great game day dinnah! And what a great game, too...I'm so happy the Saints won!
But a quick reference to The Pulse Cafe...it was ok, they've recently opened so they were out of A LOT of stuff. I think, given a few months, this place has a lot of potential. They're Jamaican Jerk Tempeh dish left a lot to be desired and was missing half the sides, but their Eggplant Cutlet Panini was insanely good. I ate half of Tim's!  It did make me long for Veggie Planet, though...
