Tofu Scramble makes a comeback!
I finally came back to my beloved tofu scramble this morning! I
decided to get a little kooky though and toss in some different
ingredients. One in particular is my secret weapon: hummus! It gives a
creamy taste, reminiscent of deviled eggs! (Which I loved) I also
added jarred minced garlic out of laziness - usually I mince up fresh
garlic...but then I reek for at least 24hours!
I've also become obsessed with collard greens. To be honest, I always
thought of them as a southern green, associating it with okra (eww).
Thus, I was scared to even try them! But then one day at Whole Foods I
read a superfoods list and discovered collard greens are more
nutritionally fruitful than kale! Now, I love my kale, but sometimes
it's just too bitter.
I also tossed in some cinnamon, crushed powdered ginger, and thyme,
along with the usual tumeric, cayenne, paprika, mustard, Braggs, red
pepper, and carrots. And just a quick note: remember to press your
tofu a little bit before you brown it in your pan! It helps it brown
faster, and you'll have fluff tofu scramble rather than tofu mush.
The end result? A complex dish of deliciousness! Get thee to a kitchen!
